Tropical Rice Salad

Time: Approx 25 minutes

Ingredients

  • 150g rice, washed

  • 1 small tin of sweetcorn, drained

  • 1/2 red pepper, cut into chunks

  • 2 spring onions, diced

  • 4-6 dried apricots

  • 1 small tin of pineapple chunks, including juice

  • 6cm cucumber, cut into chunks

  • 2 tbsp roasted pinenuts

  • 1 garlic clove or 1 tsp garlic puree

  • 1 tbsp reduced salt soy sauce

  • Grated fresh ginger to taste

  • Olive oil - drizzle over

Method

  1. Cook the rice, then run under cold water to cool quickly.

  2. Add the remaining ingredients and mix well.

  3. Adjust flavours to taste.
