Seeded Oat Cakes

Makes: 12

Time: 35 minutes

  • 100g rolled oats

  • 1 tbsp pumpkin seeds

  • 1 tbsp ground flax seeds

  • 1 tbsp chia seeds

  • 1 tbsp nutritional yeast

  • Approx 100ml warm water

  • Pinch of salt

  1. Pre-heat the oven to 180°C (fan).

  2. Add the oats, seeds, nutritional yeast and salt to a food processor and blitz until fairly fine.

  3. Tip the mixture into a small bowl, then add about half of the warm water.

  4. Mix until the water has been fully absorbed, then slowly add the remaining water.

  5. Use your hands to bring the mixture into a slightly sticky ball (if it is too dry, add more water, if it is too wet, add more oats).

  6. Leave the ball to rest for about 10 minutes.

  7. Place some baking paper onto a baking tray, then put your ball on top and some more baking paper over that.

  8. Using a rolling pin (or something similar), roll out the mixture until it's 3-4ml thick.

  9. Disregard the top sheet of baking paper and use a sharp knife to score the cracker mixture into 12 pieces.

  10. Bake in the oven for about 20-25 minutes, or until golden brown at the edges.
