Orange & Pistachio Biscotti

Time: Approx 1hr 20 minutes


  • 110g plain flour

  • ¾ tsp baking powder

  • 60g pistachios

  • 60g sugar

  • 1 large egg, beaten

  • ¼ tsp vanilla extract

  • the zest from 1/3 of an orange


  1. Pre-heat the oven to 150°C (fan).
    Sift the flour and baking powder into a bowl

  2. Mix in the pistachios and sugar, then add the remaining ingredients.

  3. Mix together – you will need to use your hands eventually to form a dough

  4. Place on a floured surface and roll into a log about 28cm long.

  5. Place onto a lined baking tray and bake for about 30 minutes.

  6. Leave to briefly cool and turn down the oven to 130°C (fan).

  7. Using a suitable knife, cut the loaf into biscuits about 1cm thick and place back onto the baking tray.

  8. Bake again for about another 30mins until firm (if you prefer them not so hard, you could try baking for less time).
