Mixed Pearl Barley Salad

  • 70g Pearl Barley, rinsed

  • 20g sun-dried tomatoes, finely sliced

  • 1 dsp of oil from the sun-dried tomato jar

  • 120g tender stem broccoli, washed

  • 3 tsp balsamic vinegar

  • 4 spring onion, sliced

  • 1 small garlic glove, finely sliced

  • 1/2 red pepper, diced

  • 160g frozen soya beans

  • 6 olives, finely sliced

  • 15g pumpkin seeds


  1. Put the pearl barley into a saucepan, cover with lots of water and cook for about 1hr, 15 minutes or as per the packet's instructions

  2. Cook the soya beans in a separate saucepan and lightly steam the broccoli.

  3.  Slice the broccoli into smaller pieces and mix all the ingredients together.
