Mixed Pearl Barley Salad

Ingredients

70g Pearl Barley, rinsed

20g sun-dried tomatoes, finely sliced

1 dsp of oil from the sun-dried tomato jar

120g tender stem broccoli, washed

3 tsp balsamic vinegar

4 spring onion, sliced

1 small garlic glove, finely sliced

1/2 red pepper, diced

160g frozen soya beans
-
6 olives, finely sliced

15g pumpkin seeds
Method

Put the pearl barley into a saucepan, cover with lots of water and cook for about 1hr, 15 minutes or as per the packet's instructions

Cook the soya beans in a separate saucepan and lightly steam the broccoli.

Slice the broccoli into smaller pieces and mix all the ingredients together.
