Mango & Coconut Snack Balls

Time: 10 minutes


  • 50g ground almonds

  • 25g jumbo rolled oats

  • 40g unsweetened dried mango

  • 1/2 tsp vanilla extract

  • 3.5 tsp water

  • Desiccated coconut


  1. Put the ground almonds, oats and dried mango into a food processor and blitz until everything is blended.

  2. Add the vanilla extract and water and briefly blitz again. The mixture should be moist but not wet and sticky. Adjust with an extra sprinkle of oats or water, as required.

  3. Form into 10 balls, then roll each one in some coconut.

NB: you may need to adjust the level of vanilla extract you use, depending on the type you have - some taste stronger than others
