Layered Mango, Raspberry & Yoghurt Delight with Granola

Time: Approx 20 minutes


  • 30g whole rolled oats

  • 10g pumpkin seeds

  • 20g flaked or finely sliced almonds

  • ¼ - ½ tsp vanilla extract (dependant on type/strength)

  • 1 tsp olive oil

  • 10g desiccated coconut

  • 1 small mango

  • Large handful of raspberries

  • 0% fat Greek yoghurt or alternative


  1. Pre-heat the oven to 130°C (fan).

  2. Put the oats, seeds and almonds on a baking tray and mix with the oil and vanilla extract.

  3. Bake for about 15 minutes, until golden, adding the coconut to the baking tray a few minutes before it’s ready.

  4. Roughly mash the fruit separately.

  5. Put the raspberries into the bottom of a glass, then add a few spoons of yoghurt, then a layer of mango and top with the granola.
