Fruit Mincemeat
Makes: The equivalent of 5 jars
Time: Approx 1 hour

125g soft, dark sugar

250ml dry-medium cider

1kg cooking apples, peeled, cored and roughly cut into small chunks

1/2 tsp mixed spice

1/2 tsp ground cinnamon

250g raisins
-
250g sultanas

The zest and juice of 1/2 a lemon

In a large saucepan, gently dissolve the sugar in the cider.

Add the remaining ingredients and simmer gently, stirring occasionally for about 30 minutes or until it's soft and pulpy.

Taste for level of sweetness - some cooking apples can be particularly sour and thus more sugar maybe required.
Suitable for freezing once cold.
Make into mince pies or try adding a crumble topping for a delicious pudding.
