Fruit Cake Bites

Ingredients

225g self raising flour

85g margarine
-
55g sugar
-
180g dried fruit i.e. sultanas and apricots

1 tbsp mixed spice

1 large egg

150ml low-fat milk of choice
Method

Pre-heat the oven to 160°C (fan).

Line a medium baking tray (around 20 by 25cm).

Sieve the flour into a large bowl.

Add the margarine and mix together with your fingertips to make breadcrumbs.

Add the sugar, dried fruit and mixed spice.

Whisk the egg and milk in a jug, then add to the dry mix.

Gently stir until combined, then tip into your baking tray.

Cook for about 15 minutes or until lightly golden on top and a skewer inserted into the centre comes out clean.

Divide into 24 pieces.
