Fruit Cake Bites

Time: 30 minutes


  • 225g self raising flour

  • 85g margarine

  • 55g sugar

  • 180g dried fruit i.e. sultanas and apricots 

  • 1 tbsp mixed spice

  • 1 large egg

  • 150ml low-fat milk of choice


  1. Pre-heat the oven to 160°C (fan).

  2. Line a medium baking tray (around 20 by 25cm).

  3. Sieve the flour into a large bowl.

  4. Add the margarine and mix together with your fingertips to make breadcrumbs.

  5. Add the sugar, dried fruit and mixed spice.

  6. Whisk the egg and milk in a jug, then add to the dry mix.

  7. Gently stir until combined, then tip into your baking tray.

  8. Cook for about 15 minutes or until lightly golden on top and a skewer inserted into the centre comes out clean.

  9. Divide into 24 pieces.
