Feta, Beetroot & Bulgar Wheat Salad

Time: Approx 25 minutes


  • 150g butternut squash, peeled, deseeded and cubed

  • 80-100g bulgar wheat, rinsed

  • Olive oil

  • 100g lightly vinegared beetroot, cubed

  • 1 handful of mixed salad leaves

  • 55g feta, crumbled

  • ¼ small red onion, finely sliced into semi-circles

  • 1 sweet eating apple, cored and finely sliced

  • 15g walnut halves, broken into smaller pieces


  1. Pre-heat the oven to 180°C (fan).

  2. Cook the bulgar wheat as per the instructions, then drizzle over some olive oil.

  3. Place the butternut squash on a baking tray, spray with some oil and bake until tender.

  4. Once everything is cooked, mix all the ingredients together
