Carrot Cake Porridge

Ingredients

40g whole rolled oats

200ml milk of choice (adjust dependant on how thick you like your porridge)

40g carrot (approx. 1 small or 1/2 medium), grated

6 walnut halves (approx. 15g), ground or chopped into smaller pieces

1/2 tsp mixed spice (or to taste)

30g raisins or sultanas

A large spoon of yoghurt of your choice
Method

Place the oats, carrot, nuts, milk, sultanas and spice into a small saucepan.

Slowly bring to the boil, then simmer for about 5 minutes or until the oats are nice and soft.

Stir through the yoghurt and serve.
