Butternut Squash & Aduki Bean Filo Pie

  • 3 large filo pastry sheets

  • Olive oil

  • 400g butternut squash, peeled and cut into chunks about 1cm thick

  • 1 400g tin of aduki beans

  • 50g feta or reduced fat salad cheese

  • Large handful of coriander


  1. Pre-heat the oven to 180°C (fan).

  2. Carefully place one sheet of filo pastry onto a baking tray that's slightly smaller than the filo sheet.

  3. Roughly brush the pastry with a little olive oil, then repeat with the other three filo sheets

  4. Scatter the butternut squash over the filo, then the aduki beans and top with the cheese.

  5. Bake in the oven for 20-25 minutes, or until golden brown.

  6. Remove from the oven and sprinkle over the coriander.
