Bean Burgers

Time: Approx 35 minutes

Ingredients

  • 1 400g can of unsalted kidney beans, rinsed and drained

  • ½ red onion, peeled and finely sliced

  • 1 small garlic clove, peeled and crushed or finely sliced

  • 1/8 tsp hot chilli powder

  • 2 tsp lime juice

  • Pinch of salt and pepper

  • Handful of fresh coriander (approx. 20g), washed and finely sliced

  • ½ tsp dried coriander

  • 1 200g can of sweetcorn

  • Approx 2 tbsp plain flour

  • 1 large tomato, sliced

  • 1 small avocado, mashed

  • 1/4 mango, skin removed & cut into slices

  • 4 bread rolls

  • Some salad leaves

Method

  1. Preheat to 180°C (fan) and line a baking tray with baking paper.

  2. Put the kidney beans into a bowl and roughly mash them with a potato masher or fork.

  3. Add the sweetcorn and briefly mash again.

  4. Mix in the remaining ingredients (except tomato, avocado, mango, bread and salad). The mixture should be wet enough to form into a pattie but not so wet that it overly sticks to your hands. Add a little more flour if needed.

  5. Form into four patties and place on the baking tray.

  6. Bake in the oven for about 20 minutes, or until cooked through (try carefully turning them over after 10 minutes).

  7. Slice 4 bread rolls in half, add some mashed avocado, a slice or two of mango, some salad leaves, tomato and your bean burger.
